These recipes were compiled to complement Bill Henderson's regimen outlined in his book Cancer-Free, Your Guide to Gentle Non-Toxic Healing, primarily to provide a wider variety of healthy, tasty choices that are gluten-free, dairy-free, sugar-free and preservative-free.
It should be noted that whenever money and/or time allow, the following are the ideals in preparing foods:
  • Use organic ingredients whenever possible.
  • Use fresh versus canned ingredients.
  • Use extra virgin olive oil or coconut oil and avoid other types of oil (except flaxseed oil only when mixed with cottage cheese).
  • Do not use high cooking temperatures for extra virgin olive oil because when exposed to high heat, it can smoke and is reported to become carcinogenic.
  • Eat the cottage cheese/flaxseed oil (CCFO) mixture in some form daily and be sure to thoroughly mix the cottage cheese and flaxseed oil with a hand-held immersion blender so that you see no oil.
  • Avoid foods in a box, package or with preservatives and ingredients with which you are unfamiliar.
  • Make your goal to work toward eating 80% raw foods (for the enzyme content) and 20% cooked foods.
  • Use only stevia, agave nectar or organic applesauce as sweeteners.
  • Be careful not to eat too many sweet foods or foods high on glycemic index (even fruits) each day. One cup of fruit in the CCFO mixture plus one small piece of allowable fruit is recommended for those fighting cancer.
  • It's recommended for those fighting cancer to avoid or substantially minimize animal protein unless you are of the metabolic body type that does require more protein than other types.
  • Avoid monosodium glutamate.
  • When cooking vegetables, less is more - avoid overcooking to derive the most benefit. Microwaving is not recommended; steaming is much better.
  • When using vegetable or meat broth, it is better to make your own broth using organic ingredients.

Never did we expect the type of emotional reactions we got from our food-sensitive guests. It really showed us the tremendous need that exists for these folks. There's so much food and yet so little that this group can eat, how sad.

After the meal people would say -
         "What delicious food! Please teach a cooking class."


And when they left our establishment, "I feel so satisfied, but not stuffed! I have energy, unlike how I feel at a normal restaurant."
